  • Vegan Chocolate Fondant Pudding

    Makes 8 puddings


    2 cups dark chocolate

    1 tin coconut milk

    1 ½ cups self-raising flour

    1 cup sugar


    1. Melt the chocolate in a bowl over a pan of boiling water and then mix in the coconut milk

    2. Take off the heat and mix in the sugar, a pinch of salt and flour.

    3. Grease 8 metal pudding moulds and put the mixture in about 1 cm from the top.

    4. Bake in the oven at at a high heat - about 200 C - for about 10 mins.

    5. Take the puddings out when the surface has started to crack.

    6. Turn out onto a plate and serve straight away with vanilla ice cream.
